Here’s our dazzling Amy, owner of Relish, a 100% vegan catering business based in Bath, and her tasty easy ‘pea’sy fritter recipe! 

At Relish, our goal is to create beautiful, tasty and wholesome food that people can’t quite believe is vegan. We want everybody to be able to try out vegan food without feeling totally overwhelmed or baffled by lists of 75 different ingredients they’ve never heard of! I recently started a budget vegan series on my Instagram page that has been going down really well with new vegans or people just interested in living a more plant-based lifestyle. Eating plant-based doesn’t need to be about cutting every single thing out of your diet all at once but doing what you can and when you can and I’m hoping to make that easier for people!

Here is my recipe for easy peasy pea fritters, perfect for lunchboxes, easy kid’s dinners (so tasty they won’t even notice they’re super healthy!) or even date night. Serve with mash, new potatoes or chips!

YIELD: 6 large patties (10 small patties)
PREP TIME: 30 mins
DIFFICULTY: easy/perfect for the little ones to join in!
INGREDIENTS:
– 200g frozen peas
– 1 red onion, chopped
– 3 cloves garlic, chopped
– 100g gram flour (chickpea flour, available in the Indian aisle!)
– 50g breadcrumbs
– 1 stock cube
– handful of chopped fresh mint & basil
– half teaspoon bicarb of soda
– salt and pepper

Optional:
– unsweetened soy yoghurt to drizzle
– tahini to drizzle

 

First of all, cook off your peas until nice and soft (5 mins or so). Drain and set aside.

Preheat your oven to 180 degrees celsius and line a baking tray with greaseproof paper.

Fry off your chopped onion and garlic on a medium heat until translucent.

Crumble in your stock cube to form a paste.

In your blender/hand blender put the cooked peas, onion and garlic mix, mint and basil and pulse lightly until you have a slightly chunky (few whole peas for texture) but mostly smooth pea puree.

Tip into a bowl and add the gram flour, bicarb of soda and breadcrumbs.

Mix together, taste and season with salt and pepper.

Wet your hands (the mix will be sticky) or using an ice cream scoop, dollop 6 large patties on the baking tray and flatten slightly.

Bake for 20 minutes until slightly golden on top.

Serve with a drizzle of tahini, a dollop of hummus or a soy yoghurt and enjoy.

Note: these are also great for dinner parties/buffets served on a beautiful platter with fresh herbs and a minty yoghurt – they go down an absolute treat with everyone!
