Monique founder of Goodness Grazers gives us her “guilt free, refined sugar free, gluten free, dairy free pick me up,” a ballsy treat that can be added to any picnic box or platter!

I have such a sweet tooth and always looking for that afternoon sweet hit or after dinner munch. I use this recipe as a base and add in different flavours depending on what I have available.

You’ll need:

75g pitted dates

Boiling water

1 tbsp coconut oil

Splash of vanilla essence

Pinch of salt

80g oats

40g nuts

Put the pitted dates into the blender with enough boiling water to cover the dates. Add coconut oil (if solid it will melt in the boiling water). Soak for about 5 mins. Add a splash of vanilla essence and salt. Blend until smooth. It should be thick enough to stick to the sides but thin enough to blend through. This mixture is yum..like a vegan caramel.. remove mixture and place in a bowl.

Put the oats and nuts into the blender and wizz until fine to create an oat/nut flour. I like some chunks of nuts in there so wizz to what you like.

Put mixture into the bowl and mix all together, roll into small balls and pop into freezer (so you can eat them sooner) and store in the fridge. Enjoy!

The above can act as a ‘base’ to add other flavours to. Here is some of my favs:

3 tbsp cacao and roll in coconut – coco choccy hit

Roll in freeze dried berries – beautiful colours too!

Swap out nuts and add protein powder for an extra protein hit  

1 tbsp chia seeds to get that fuller for longer feel and a bit of crunch
